  • 4 whole chicken leg quarters
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon chili flakes
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon dark soy sauce
  • 1 tablespoon plant-based substitute for oyster sauce
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil.
  2. In a mixing bowl, whisk together olive oil, paprika, onion powder, chili flakes, black pepper, salt, dark soy sauce, plant-based oyster sauce, lemon juice, garlic, and ginger until well combined.
  3. Score each chicken leg quarter with three shallow cuts on both the thigh and drumstick.
  4. Place the scored chicken on the prepared baking sheet without overlapping.
  5. Spoon half of the marinade over the chicken and massage it into the skin.
  6. Bake in the preheated oven for 30 minutes.
  7. Remove from oven, spoon over remaining marinade, and bake for an additional 15 minutes until cooked through.
