  • 3 pounds boneless, skinless chicken thighs
  • 1 large onion
  • 2 bell peppers (yellow and green)
  • 3-6 jalapeño peppers
  • 30 ounces Great Northern white beans
  • 15 ounces sweet corn
  • 22 ounces Alfredo sauce
  • 1 cup salsa verde
  • 2 15-oz cans low sodium chicken broth
  • 2 teaspoons white pepper
  • 2 teaspoons Mexican oregano
  • 1 teaspoon cumin seeds (toasted)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic

Instructions

  1. In a Dutch oven, heat vegetable oil over medium heat. Add chopped onion and bell peppers; cook until translucent.
  2. Stir in minced garlic, then add cubed chicken and cook until just undercooked.
  3. If using a slow cooker, transfer the mixture now; otherwise continue on the stovetop.
  4. Toast cumin seeds in a dry skillet until fragrant, then add to the pot.
  5. Pour in chicken broth, rinsed white beans, spices, Alfredo sauce, salsa verde, and corn. Simmer for about 40 minutes until flavors meld.
