  • 4 skinless salmon fillets (about 6 oz each)
  • 1 bunch fresh asparagus (trimmed)
  • 1 cup ricotta cheese
  • 2 tablespoons fresh basil (finely chopped)
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 garlic clove (minced)
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, chopped basil, lemon zest, lemon juice, minced garlic, salt, and pepper until well mixed.
  3. Blanch asparagus in boiling water for 1–2 minutes; drain and set aside.
  4. Butterfly thick salmon fillets if necessary for easier rolling.
  5. Spread the ricotta mixture evenly over each fillet and place 3–4 asparagus spears at one end. Roll up tightly and secure with toothpicks or kitchen tapple vinegar.
  6. Place rolls seam-side down in a greased baking dish. Drizzle with olive oil and season with salt and pepper.
  7. Bake for 18–22 minutes until cooked through and flaky.
