  • 1 cup sugar
  • ¾ cup brown sugar
  • 2 large eggs
  • 2 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 2 Granny Smith apples
  • ¾ cup water
  • ⅓ cup granulated sugar
  • 2 tablespoon cornstarch
  • 1 ½ teaspoon lemon juice
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a mini muffin pan with non-stick spray.
  2. In a large bowl, cream butter, granulated sugar, and brown sugar until fluffy. Beat in eggs and vanilla extract.
  3. In another bowl, combine flour, baking soda, baking powder, and salt; gradually mix into the wet ingredients.
  4. For the filling, cook diced apples in water with granulated sugar, cornstarch, lemon juice, and cinnamon for about 5 minutes until slightly softened.
  5. Fill each muffin cup halfway with cookie dough, add apple filling on top, then cover with more cookie dough.
  6. Bake for 15 minutes until golden brown; allow to cool briefly before removing from the pan.
