  • 12 oz bow-tie pasta (or any short-cut pasta)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons red apple vinegar
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic (minced)
  • 12 oz cherry tomatoes (halved)
  • 2 medium cucumbers (quartered)
  • 1 medium red bell pepper (diced)
  • 1/3 cup red onion (chopped)
  • 1/3 cup pitted black olives (sliced)
  • 1/3 cup pitted green olives (sliced)
  • 4 oz crumbled feta cheese

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water. Set aside.
  2. In a mixing bowl, whisk together olive oil, lemon juice, apple vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper.
  3. In a large bowl, combine cooled pasta with tomatoes, cucumbers, bell pepper, onion, and olives.
  4. Pour the dressing over the salad ingredients and toss gently to combine.
  5. Sprinkle crumbled feta on top and toss lightly again.
  6. Chill in the refrigerator for at least 10 minutes before serving for enhanced flavor.
